Sausage & Mash with Bacon & Ale Gravy

Serves 4

8 Brocket Hall Foods Sausages

Mashed Potato - made to your favourite recipe

Ingredients for Bacon & Ale Gravy

4 Brocket Hall Foods Bacon Rashers, cut into thin strips

2 large onions, sliced

2 garlic cloves, chopped or crushed

1 tablespoon olive oil

4 oz beef or vegetable stock

8 oz Traditional Ale

3 sprigs thyme, fresh

Black pepper and salt to taste

Cook Brocket Hall Foods sausages, two per serving, to your liking and also make up your favourite mashed potato.

While cooking the above make the gravy by heating the oil in a saucepan and adding the Brocket Hall Foods bacon. Fry for 1 minute then add the onion and garlic and cook until golden. Add the stock and traditional ale and bring to the boil. Add thyme and continue to cook for several minutes more until reduced and thickened. Season with pepper and salt to your liking and serve.

Sausage, Bacon and Ale Casserole

Serves 4

8 Brocket Hall Foods Sausages

8 Brocket Hall Foods Bacon Rashers

1 large onion, sliced

1 large carrot, chopped

1 leek, sliced (optional)

2 garlic cloves, chopped or crushed

1 tablespoon olive oil

8 oz Traditional Ale

1 15 oz can diced tomatoes

Black pepper and salt to taste

Wrap each Brocket Hall Foods sausage in a rasher of Brocket Hall Foods bacon then brown in a pan with half the oil over a medium-high heat. Remove the browned, bacon-wrapped sausages from pan, lower the heat to medium and add the remaining oil, onion, carrot, leek (if using) and garlic, and cook for 10 minutes. Add the traditional ale to the pan and cook for 15 minutes. Add tomatoes and the browned, bacon-wrapped sausages. Simmer uncovered for 30 minutes, stirring occasionally. Season with pepper and salt to your liking. Serve with lightly steamed broccoli and a baked potato.
